There's a version of the weekend cooking project that starts the night before — you've mixed a levain, you've done your folds, and by Saturday morning you're pulling a loaf out of the Dutch oven that you're genuinely proud of. And then you put a slice of it in a mediocre toaster and watch it emerge unevenly browned, slightly soggy in the middle, and vaguely disappointing.
