Arrowroot powder is one of those ingredients I'd describe as quietly powerful. It doesn't have the cult following of, say, a fancy finishing salt or a single-origin chocolate, but once you start cooking with it regularly, you wonder how you got along without it. I've been using Jiva Organics' 2-pound bag as my go-to for the past several months, and it's prompted me to think a lot about what arrowroot powder actually does — and why it does it better than the alternatives in certain situations.

The short version: arrowroot thickens at a lower temperature than cornstarch, produces a clearer gel, and doesn't break down as dramatically when combined with acidic ingredients. That last point is huge for anyone who's ever made a lemon curd or a berry compote and watched a cornstarch-thickened sauce turn weirdly stringy. Arrowroot handles acid gracefully.
